Nothing says its summer like the smell of mangoes wafting through the house. Amba khatta or mango chutney is a popular accompaniment to many Odia dishes. This particular version uses ripe mangoes to give it a sweet and spicy taste. Made with just a few ingredients, this quick recipe will add a delightful flavour to any meal.

INGRIDIENTS

1. Vegetable oil- 2 tbsps
2. Dry red chilly- 1-2
3. Mustard seeds- ½ tsp
4. Grated ginger- 1 tbsp
5. Green chilly- 1
6. Curry leaves- 8-9
7. Semi ripe mangoes, diced- 100 gms
8. Salt- ½ tsp
9. Turmeric powder- ½ tsp
10. Red chilly powder- ½ tsp
11. Jaggery- 15-20 gms
12. Roasted dry red chilies cumin powder- ½ tsp
13. Water

PROCEDURE

1. Take 2 tbsps vegetable oil in a small kadhai
2. Once the oil is hot, add 1 dry red chilly
3. Add ½ tsp mustard seeds
4. Let it crackle
5. Add 1 tbsp grated ginger
6. Add 1 green chilly slit into half
7. Add the curry leaves
8. Add the diced mangoes
9. Add ½ tsp salt
10. Add ½ tsp turmeric powder
11. Add ½ tsp red chilly powder
12. Give it a good mix
13. Add the jaggery
14. Mix till the jaggery melts
15. Let it cook for a few minutes
16. Cover the kadhai for 5 minutes on low heat
17. Remove the lid, add ½ cup water
18. Cook for 3-4 minutes
19. Cover the kadhai for couple of minutes
20. Remove the lid, cook on low heat for another 2-3 minutes
21. Add ½ roasted dry red chilies cumin powder and mix
22. Turn off the stove, Aamba khatta is ready!
