Dahibara aloodam can easily be termed as every Odia’s guilty pleasure. The humble and healthier homemade version this popular street food consists just of the soft donut shaped baras soaked in a mint coconut flavored tempered yogurt mixture. An instant mood lifter, dahibara is an all season family favourite.


1. Biri dali/ urad dal- 1 cup
2. Rice- 1/3rd cup
3. Salt
4. Baking soda- 1/3rd tsp
5. Grated coconut- 1/4rd cup
6. Mint leaves- 10-15
7. Green chillies- 3-4
8. Ginger- 1 inch
9. Sugar- 1 tsp
10. Plain curd/ yogurt- 3 tsps
11. Vegetable oil- 2 tsps
12. Dried red chillies- 2
13. Mustard seeds- ½ tsp
14. Curry leaves- 7-10
15. Black salt
16. Coriander leaves
17. Roasted cumin dry red chilly powder


1. Add 1 cup biri dali/ urad dal and 1/3rd cup in a bowl
2. Soak in water for 7-8 hours
3. Grind the mixture to a smooth paste
4. Add ½ tsp salt to the paste
5. Add 1/3rd tsp baking soda
6. Mix well and keep it aside
7. In a grinding jar add 1/4th cup grated coconut
8. Add 10-12 mint leaves
9. Add 2 green chillies
10. Add 1 inch ginger
11. Add 1 tsp sugar
12. Add 2 tsps plain yogurt
13. Add little water
14. Grind into a slurry
15. Take 1 cup plain yogurt in a bowl
16. Add a pinch of salt
17. Add the slurry in to the yogurt
18. Add 1/3rd cup of water
19. Mix well
20. Take 2 tsps of vegetable oil in a kadai
21. Add 2 dried red chillies
22. Add ½ tsps mustard seeds
23. Add 7-10 Curry leaves
24. Add 1-2 green chillies
25. Saute for few seconds
26. Add the tempering to the yogurt mixture
27. Heat oil in the same kadai for deep frying
28. Mold the mixture into small donut shaped patties called bara
29. Slip into hot oil one by one
30. Fry evenly for couple of minutes on both sides till they turn golden
31. Once done, remove the baras and put them in a bowl of water
32. After around 10 minutes squeeze out the excess water from the baras and add them to the tempered yogurt mixture
33. Be careful not to break them
34. Remove few dahi baras in a serving bowl
35. Sprinkle black salt
36. Garnish with roasted cumin dry red chilly powder, fresh coriander leaves and fresh grated coconut
37. Your scrumptious bowl of dahibara is ready to be served!
