Chuda/ Poha/ Chivda (Flattened Rice), this popular ingredient known by various names around the country is a basic item found in every Indian kitchen. While the preparation varies from state to state, today we have for you the quintessential preparation of chuda in an Odia household i.e. Chuda Bhaja. If you want to whip up the perfect teatime snack with limited ingredients (thanks to the never ending lockdown), look no more. Chuda Bhaja is super easy and can be cooked in just a few minutes.

Savoury Chuda Bhaja

Prep time: 5 minutes
Cooking time: 12-15 minutes

Ingredients

1. Chuda/chivda- 1 bowl
2. Oil- 3 tbsp
3. Dry red chilies- 2
4. Cumin seeds- 1 tsps
5. Curry leaves- 10
6. Sliced onion-1 small
7. Salt to taste

Procedure

1. Dry roast the chivda for 5-6 mins
2. Heat oil
3. Add dry red chillies
4. Add cumin seeds
5. Add curry leaves
6. Sauté for couple of minutes
7. Add the sliced onions
8. Add salt
9. Sauté on medium flame till onions turn translucent
10. Add the chuda
11. Sauté for 2-3 minutes till the chuda turns crisp and golden brown
12. Garnish with fresh coriander leaves
13. Turn off the flame and serve with tea

Sweet Chuda Bhaja by Prattyandfood

Prep time: 2 minutes
Cooking time: 5 minutes

Ingredients

1. Chuda- 1 and ½ cup
2. Raw peanuts- 1/4 cup, you can use more or less
3. Ghee or cooking oil- 1 tsp
4. Sugar- 1-2 tsp
5. Black salt, as per taste – we used about 1/4 teaspoon

Procedure

1. Heat a pan, add the ghee (or oil) and peanuts
2. Let it cook on low-medium heat, keep stirring to prevent them from burning
3. When the peanuts are almost done, add in the flattened rice (chuda/chivda)
4. Add the black salt Keep stirring so the chuda get crisp evenly without burning
5. When the chuda looks golden, add in the sugar, adding it at the end helps caramelise it without burning anything
6. After adding in the sugar, continue stirring for another minute then turn of the heat and serve
7. Best served with a cup of chai!
