Tomatoes have found their own sweet place in kitchens around the globe. Considered to be one of the most versatile ingredients, there are a million ways in which tomatoes can be eaten. Here is a very special and easy savoury recipe from Odisha you will absolutely love – Tomato Khatta!

Time Required- 30 minutes
Serves 3-4 persons

Ingredients
1. Chopped tomatoes- 4
2. Panch phutana- 1 ½ tsps
3. Vegetable oil- 3tsps
4. Chopped green chillies- ½ tsps (Optional)
5. Dry red chillies- 2-3
6. Grated ginger- 2 tsps
7. Curry leaves- 10-15
8. Turmeric powder- ½ tsps
9. Sugar- 2 ½ tsps
10. Grated coconut- 4 tsps (Optional)
11. Roasted cumin- dry red chillies powder- ½ tsps
12. Salt to taste

Procedure
1. Heat the oil
2. Add pancha phutana
3. Add dry red chillies
4. Add curry leaves
5. Add grated ginger
6. Saute for few minutes
7. Add chopped tomatoes
8. Keep mixing the tomatoes
9. Add turmeric powder
10. Mix again and mash with spatula
11. Cover for 8-10 minutes
12. Remove the lid and mix well
13. Mash well with a potato masher
14. Add coconut, mix well
15. Add salt and sugar
16. Add 1 cup water, give it a mix
17. Cover for 5-6 mins
18. Add roasted cumin- dry red chilies powder
19. Give it a mix, garnish with chopped coriander leaves
20. Your Tomato Khatta is ready to be served!
